I had a request a while back for my favorite soup recipe here and instead of just sending it to that one individual I’ve decided to post it here in case anyone else wants to give it a try! It’s mighty tasty:)
LOCRO DE PAPAS aka Potato Locro (sorry, I’m not sure what locro means in English): serves about 3
- 1 liter water
- 1 onion (or leek) chopped fine
- 6 medium sized white skin potatoes, peeled and sliced in quarters
- 1 cup milk
- however much “white” cheese you think sounds good, cut in chunks
- cream/butter (optional – to taste, if you want it extra creamy and fatty!)
- 1 avocado
1) Combine water, potatoes, and the onion/leek. Cook until potatoes are very soft, starting to disintegrate in fact. A mix of disintegrated potato with a few solid parts is best. Stir occasionally while cooking.
2) When the potatoes are ready, add in the milk and cheese (and cream/butter if you desire); cook until cheese is melted.
3) Serve with a large slice (1/4 is good) of an avocado, and enjoy!
Really very easy and with lots of room for experimentation, let me know if you try it!
